How do we perform a manual self test to show fire inspectors it is working?

Do we have to take the light fixture apart to use the system?
If I put this in a standard fixture, how does the unit know if the power went out, or if we simply turned off the lights at the end of the workday?
According to the manufacturer, this emergency battery comes with an indicator light and a push to test button that will be used for testing purposes. A constant power source is required for use in conjunction with this battery.

do they make a wall plug-in version with a 10-12 ft cord?

I need a unit to plug into a standard wall plug 110/120 VAC
In general, building inspectors do not allow emergency lighting to be plugged into a receptacle, so you will want to check with your inspector to see if they will allow you to use Grainger item 3WDE9.
